Heritage Tomato Salad:
Isle of Whight Heritage tomatoes various types and colours.
Elderflower Vinegar: For seasoning
Method:
Quickly blanch the tomatoes in boiling water(about 10 sec) and refresh them in ice bath.
Remove the skin from tomatoes and keep them on clean cloth. Do not blanch tomatoes with
Tiger skin texture.
Cut the dieerent size tomatoes in desired shapes but in bite sizes.
Spray the tomatoes with elderflower vinegar to season them and keep them in fridge for 20min.
Assembly:
Brush Generous amount of pesto at bottom of Bowl or Plate.
Arrange dieerent heritage tomatoes infused with elderflower vinegar as desired. Quenell the
burrata cream next to tomatoes. Tuck Grisiini spirals in creamed burrata. Place fresh Herb
Bouquet on top and served salad with chilled Tomato essence.
