CATERING AND HOSPITALITY NQ
(SCQF Level 5)
Course overview
The Catering and Hospitality Industry offers exciting career
opportunities. The course will help you develop the basic
skills every cook needs, through working in our own fully
equipped commercial kitchens and restaurant. The course
will provide ample opportunity to learn how to prepare, cook
and finish a wide range of sweet and savoury dishes to
commercially acceptable standards.
This 6 month course starts August.
Minimum entry requirements
• National Progression Award (NPA) at SCQF level 4 in
Professional Cookery; OR
• Three National 4 qualifications including English and
Mathematics or Numeracy; OR
• Two years experience of working in a professional kitchen
within the Catering Industry; OR
• Other equivalent qualifications or experience.

PROFESSIONAL COOKERY NQ
(SCQF Level 5)
Course overview
Professional cookery has never been as popular as it is
today. This course is an excellent opportunity for you to
study and prepare for a career as a chef with excellent
career opportunities and progression routes open to those
who successfully achieve the qualification. The course gives
students an opportunity to prepare, cook and serve a range
of sweet and savoury dishes both in our industry standard
training kitchens and in our Bistro, which serves breakfast
and lunch daily to students and staff.
Minimum entry requirements
• National Progression Award (NPA) at SCQF level 4 in
Professional Cookery; OR
• Three National 4 qualifications including English and
Mathematics or Numeracy; OR
• Other equivalent qualifications or experience.

PROFESSIONAL COOKERY NQ
(SCQF Level 6)
Course overview
The course gives students the opportunity to build upon
the basic skills that were acquired during the successful
completion of the Level 5 Professional Cookery course. The
course provides a platform for you to enhance your skills in
the preparation, production and finishing of a wide range of
sweet and savoury dishes in both our purpose-built, state
of the art training kitchens and in our fine dining outlet,
Scholars'.
Minimum entry requirements
• National Certificate at SCQF level 5 in Professional
Cookery; OR
• General Catering Course at SCQF level 5; OR
• Practical Bakery and Cookery Course at SCQF level 5;
OR
• Any SCQF level 5 qualification in Professional Cookery,
eg NVQ or SVQ level 2; OR
• Other equivalent qualifications/experience.

PATISSERIE HNC
(SCQF Level 7)
Course overview
This course will develop your culinary skills to an
advanced level, focusing on specialist patisserie subjects
and providing you with the knowledge you'll need for a
supervisory role.
Minimum entry requirements
• Professional Cookery Year 2 / NC Professional Cookery
Level 6; OR
• Other equivalent qualifications or experience.

PROFESSIONAL COOKERY HND
(SCQF Level 8)
Course overview
Professional cookery has never been as popular as it is
today. This course is an excellent opportunity for you to
study and train for a career in catering with excellent career
opportunities and progression routes. Experience in the
Hospitality Industry is an integral part of the course and
you'll work towards the Industrial Experience unit.
Minimum entry requirements
• Professional Cookery Year 2 / NC Professional Cookery
(Level 6); OR
• Other equivalent qualifications or experience.
